Spanish Potato Omelette
A staple of the Spanish diet, Tortilla de Patatas is simple to make and delicious! Here’s a recipe for those of you who like to experiment in the kitchen (and it’s also great for those of you who don’t.
You will need:
4 eggs
1 large, golden potato
1 small onion
a bit of olive oil
Cut the potato and onion into small cubes. Drizzle a bit of olive oil over it and put it in the microwave for about 5 minutes to cook the potato and soften the onion. While this is cooking, break and beat the eggs in a bowl. Remove the potato and onion from the microwave and pour it into the egg, mixing well. Pour all of it into a small frying pan with a bit of hot oil. When one side is completely cooked, turn the omelette over, turn off heat and wait for the second side to finish cooking. That’s it!
If you’d like to add a different flavor to your tortilla, you can throw in anything, like tomato or peppers. It’s flexible and delicious!
Simple, easy and I hope, tasty.
